Creamy Garlic Pasta

I found this recipe via Pinterest and it was amazing! It was so easy to make and tasted SO good- my entire family adored it.

Ingredients:
2 teaspoon olive oil
4 cloves garlic, minced
2 tablespoons butter
1/4 teaspoon salt
1/2 teaspoon pepper
3 cups chicken broth, plus a little extra
1/2 pound spaghetti
1 cup grated Parmesan cheese
3/4 cup heavy cream
1 1/2 tablespoons dried parsley 

Directions:
In a medium pan, heat olive oil over medium heat.  Add the garlic and stir for 1-2 minutes.  Add butter and melt, stirring constantly.  Add salt, pepper, and 3 cups chicken broth.  Bring to a boil.  Add the pasta and cook according to box directions.  Add a little more chicken broth if the noodles start to stick to the bottom and burn.  Add the cheese, cream, and parsley when the pasta is cooked to your desired tenderness and mix thoroughly.  Serve immediately.

Oatmeal Smoothies

In honor of New Years and all those resolutions to be healthier out there, I'm going to post my favorite healthy recipes this week. Starting with...breakfast! I am a believer that breakfast can make or break your morning. Can't you just tell a difference when you eat something healthy, vs grabbing pop-tarts on the way out? 


I found this recipe for oatmeal smoothies a few weeks ago, and it has become a breakfast staple for Jase & I. Delicious, filling, and easy to make, they are the perfect breakfast shake. I feel like they give me so much energy and keep me satisfied until lunch. I love them.



Ingredients 
1 cup ice
1/2 cup frozen raspberries
1/2 cup plain lowfat yogurt
1 banana
1/2 cup old-fashioned rolled oats
1 tablespoon honey
1 cup coconut water (or other liquid...we use water or juice)

Place ice and raspberries in the bottom of blender, and all other ingredients on top. Whir until completely smooth. Serve and enjoy!
